Chef Jack Cassidy Brings Global Flavours to Rutherglen in an Exciting Culinary Relaunch of Thousand Pound

Thousand Pound, the cherished wine bar in the heart of Rutherglen, is set to reopen its doors on Thursday, 5 September, with a completely revamped menu that promises to take diners on a culinary journey across Asia, infused with modern Australian flair. Spearheaded by Executive Chef Jack Cassidy (also of KIN, New Regional Restaurant of the Year), the new menu reflects the dishes that he and his kitchen team love to eat, bringing together influences from China, Thailand, Vietnam, and Nepal.​

Chef Cassidy explains, "We wanted to create a menu that is not just about the food, but about the experience of eating together and enjoying flavours from different parts of the world." Among his favourite dishes are the Tofu with Crispy Chilli and Cassava Crackers, a creation that he believes will change a few minds about tofu. The Half Chicken with Ginger Garlic Sauce is another standout, described by Cassidy as packed with flavour and juiciness, promising to be a crowd-pleaser.​

The new menu at Thousand Pound is a testament to the kitchen team's passion for bold, exciting flavours. Dishes like the Korean Fried Chicken Riblets, served with Kewpie Mayo and Hot Sauce, are set to become instant favourites. The Spring Onion Pancake with Mushroom X.O offers a delightful vegan option that showcases the team's expertise in creating dishes rich in umami. The Longevity Noodle, that can be slurped indefinitely, features a unique combination of spring onion sauce and coconut, while the Murray Cod Salad is fresh and light, elevated by a spicy dressing that brings out the best in the dish.​

Thousand Pound’s warm and inviting atmosphere has been subtly updated to complement the new menu. With a focus on creating a space where locals can feel at home, the bar now features lower tables and settings with chopsticks, as well as house-made Asian dipping sauces. This blend of comfortable surroundings and a menu full of flavoursome dishes makes Thousand Pound the perfect spot for both regular visits and special occasions.
